Green Entomatadas are a tasty Mexican dish made with corn tortillas that are filled with tender chicken or pork and then topped with cheese, crema, and a tangy tomatillo salsa.
Ingredients:
- 12 corn tortillas
- 2 cups of cooked shredded pork or chicken
- 2 cups of grated queso fresco
- 1 cup of finely chopped onion
- 2 cups of green tomatillo salsa
- 1/2 cup of Mexican crema
- 1/4 cup of vegetable oil
- Salt and pepper to taste
Instructions:
In a pan, heat the vegetable oil over medium heat
Quickly dip each corn tortilla in the green tomatillo salsa and place it in the pan to soften for a few seconds on each side
Stack them on a plate as you go
Fill each tortilla with shredded pork or chicken, onion, and queso fresco, then roll them up
Serve the entomatadas hot, drizzled with Mexican crema and extra queso fresco on top
