STRAWBERRY, APPLE + QUINOA SPINACH SALAD



This Strawberry, Apple, and Quinoa Spinach Salad is a great mix of sweet and savory tastes. The natural sweetness of the fresh strawberries and apple slices comes from the apples, and the crunch of the quinoa and pecans is great. It's a healthy and tasty salad for any event because it has tangy feta cheese and balsamic vinaigrette on top of it.

Ingredients:

  • 1 cup cooked quinoa
  • 2 cups fresh spinach leaves
  • 1 cup sliced strawberries
  • 1 apple, thinly sliced
  • 1/4 cup chopped pecans
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons balsamic vinaigrette dressing

Instructions:

Cook quinoa according to package instructions and let it cool

In a large salad bowl, combine the fresh spinach leaves, sliced strawberries, thinly sliced apple, chopped pecans, and crumbled feta cheese

Add the cooked and cooled quinoa to the salad bowl

Drizzle the balsamic vinaigrette dressing over the salad ingredients

Gently toss everything together to evenly distribute the ingredients and dressing

Serve immediately as a refreshing and nutritious salad

Paleo Snack Mix



This Paleo snack mix is a perfect combination of nuts, seeds, and dried fruits. It's a crunchy, satisfying snack that's ideal for on-the-go or whenever you need a quick energy boost. Plus, it's gluten-free and Paleo-friendly!

Ingredients:

  • 1 cup raw almonds
  • 1 cup cashews
  • 1 cup unsweetened coconut flakes
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, chopped
  • 1/2 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon honey optional
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon

Instructions:

Preheat your oven to 300F 150C

In a large mixing bowl, combine almonds, cashews, coconut flakes, dried cranberries, dried apricots, pumpkin seeds, and sunflower seeds

In a separate small bowl, mix together melted coconut oil, honey if using, sea salt, and ground cinnamon

Pour the coconut oil mixture over the dry ingredients in the large bowl and toss until everything is well coated

Spread the mixture evenly on a baking sheet lined with parchment paper

Bake in the preheated oven for 20-25 minutes or until the nuts and seeds are lightly toasted

Stir halfway through to ensure even cooking

Remove from the oven and let it cool completely before breaking it into snack-sized pieces

Store in an airtight container and enjoy as a delicious Paleo snack!

Keto Bacon-Wrapped Avocado Bites



These Keto Bacon-Wrapped Avocado Bites are a great low-carb snack or appetizer. Avocado that is creamy and wrapped in bacon that is crispy and perfectly seasoned. They're very simple to make and taste great!

Ingredients:

  • 2 avocados, halved and pitted
  • 8 slices of bacon
  • Salt and pepper to taste
  • Toothpicks

Instructions:

Start by heating the oven to 400F 200C

There will be 16 avocado slices after cutting each half in half into four quarters

Add salt and pepper to the avocado slices

Use a toothpick to hold each avocado slice together with a bacon slice

Use parchment paper to line a baking sheet and put the avocado bites that have been wrapped in bacon on it

Heat the oven and put the bacon in it

Bake for 15 to 20 minutes, or until the bacon is crispy

Take it out of the oven when it's done and let it cool a bit before serving

Enjoy these tasty keto avocado bites wrapped in bacon!

Summer Corn Quinoa Salad



A healthy and refreshing quinoa salad with summer flavors like sweet corn, juicy cherry tomatoes, and a tangy lime dressing.

Ingredients:

  • 1 cup quinoa, cooked and cooled
  • 1 cup fresh corn kernels, cooked
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

Put the quinoa, corn, cherry tomatoes, cucumber, red onion, cilantro, and feta cheese in a large bowl

Mix honey, lime juice, salt, and pepper in a small bowl with a whisk

Mix the quinoa and vegetables together, then add the dressing and toss everything together

Put it in the fridge for at least 30 minutes before serving so the flavors can mix

Add more cilantro and feta as a garnish before serving
