Ingredients:
- 1 lb ground pork
- 1 cup kimchi, finely chopped
- 1/4 cup panko breadcrumbs
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon gochujang Korean red pepper paste
- 1 tablespoon sesame oil
- 4 burger buns
- 4 slices Swiss cheese
- Lettuce leaves
- Sliced red onion
- Sliced cucumber
- Sriracha mayo optional
- Salt and pepper to taste
Instructions:
In a large mixing bowl, combine ground pork, chopped kimchi, panko breadcrumbs, minced garlic, soy sauce, gochujang, sesame oil, salt, and pepper
Mix the ingredients until well combined, and then shape the mixture into 4 burger patties
Preheat a grill or stovetop pan over medium-high heat
Cook the pork-kimchi burger patties for about 5-6 minutes per side, or until they are cooked through and have a nice char on the outside
During the last minute of cooking, place a slice of Swiss cheese on each patty and allow it to melt
While the burgers are cooking, lightly toast the burger buns on the grill or in a toaster
To assemble the burgers, place lettuce leaves on the bottom half of each bun, followed by a pork-kimchi patty with melted Swiss cheese
Top with sliced red onion and cucumber
If desired, drizzle sriracha mayo on the top half of the bun before placing it on top of the burger
Serve the Crunchy Pork-Kimchi Burgers hot, with your favorite side dishes
