Greek Frittata with Zucchini, Tomato, Feta, and Herbs



The flavors of zucchini, tomato, feta cheese, and fresh herbs come together in this Greek-style frittata to make a tasty and filling meal. You can eat it for breakfast, brunch, or a light dinner.

Ingredients:

  • 6 large eggs
  • 1 medium zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh herbs such as dill, oregano, or parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Warm up the broiler in your oven

Heat the olive oil over medium-high heat in a large skillet that can go in the oven

Put in the diced zucchini and cook for three to four minutes, until it starts to get brown and soft

After you add the cherry tomatoes that have been cut in half, cook for another two to three minutes, until they start to give off their juices

Flake the feta cheese, chopped fresh herbs, eggs, salt, and pepper together in a bowl

Spread the vegetables out in the skillet and then pour the egg mixture over them all

Slow down the heat and let the frittata cook for 5 to 7 minutes, or until the edges begin to set

Place the skillet under a broiler that has already been heated

Broil for two to three minutes, or until the top is golden and the frittata is set

First take it out of the oven and let it cool down a bit

Then cut it into wedges

If you want, you can serve your Greek frittata warm and top it with extra fresh herbs
