Sunchoke Hummus with Meyer Lemon



Savor this delectable take on classic hummus with the distinct flavor of sunchokes and the zesty, bright pop of Meyer lemon. Creamy and flavorful, this sunchoke hummus is ideal as a spread or dip for your preferred small bites or finger foods.

Ingredients:

  • 1 cup sunchokes, peeled and chopped
  • 1/4 cup tahini
  • 2 tablespoons Meyer lemon juice
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons water adjust as needed

Instructions:

For about 10 to 15 minutes, or until they are soft, steam or boil the sunchokes that have been peeled and cut up

Let them drain and cool down a bit

Cooked sunchokes, tahini, Meyer lemon juice, minced garlic, ground cumin, paprika, salt, and pepper should all be put into a food processor

If you need to, scrape down the sides of the bowl as you blend the ingredients until they are smooth

Slowly add the olive oil and water to the food processor while it's running

Keep blending until the hummus is the consistency you want

If you think the seasonings need to be changed, taste the hummus

You can add more salt, pepper, or lemon juice if you want to

Add a little olive oil to a serving bowl and add the Sunchoke Hummus

If you want, you can decorate it with paprika or fresh herbs

You can dip pita bread, crackers, or vegetable sticks in it
